Top Chef fans know Tom Colicchio as the show's formidable head judge, whose no-nonsense personality and impeccable taste have made him the heart -- and stomach -- of the long-running Bravo reality series. But Colicchio wasn't always the bald, blue-eyed master chef he is today. Years ago, he was a blue-eyed master chef with hair.

Viewers got a peek at the Craft restaurateur's old self on the Jan. 9 episode of Top Chef: Seattle, when he met up with his former business partner Danny Meyer, whose Union Square Hospitality Group is behind New York eateries Shake Shack, Blue Smoke, and Gramercy Tavern. As the pair reminisced about their first meeting more than a decade ago, an old snapshot of Colicchio popped up onscreen.

In the photo, dated 1990, the James Beard Award-winning chef is nearly unrecognizable. His face is more or less the same, but his normally bald head is covered with a shock of dark, wavy hair.

The episode also featured a few other surprises, including the elimination of -- spoiler alert! -- Micah Fields. Judges called his dish "a poo poo platter of fish."

Top Chef: Seattle airs Wednesday nights at 10 p.m. ET on Bravo.
